I love brined poultry, but I ain't got that brining bucket. And if I did, I don't have frig space so I got creative. A cut down a 5 & 1/2 gal. kitty litter tub, 2 plastic bags, 4@ 1gal blocks of ice and a good camp cooler. After 24hrs the therm was at 40* while holding a 12# gobbler. Works for this ole country boy.

Chop NICE looking bird!

Those buckets are pretty cool. I have been using a square NSF Translucent Poly 12qt for a while now (it fits nicely in the garage fridge & up to 2 large birds). I also have a 22qt for large T-Birds....I usually just put a glass plate on top to keep the floaters down but those briners are pretty cool.

PS, I'm jelly about your three fridges.....Two are nice but somethings a third would be really nice!

Great looking bird Chop! I'm due for another cured bird. Thanks for the inspiration.

I have seen those brining buckets at our local Smart Foodservice (formerly Cash and Carry) and have yet to pull the trigger. I've just been using 5gal buckets with weights and has gotten me by. Might have to splurge on the next trip!

You know , I went 24 hours on that bird and added the lemon extract to the brine . It was one of the best I've done .

Been cookin and smokin up a storm, but needed a break from... well... certain "doubting mustafas"...

Lemon extract you say? Hmm... Must try! I just got some lemonade this week I was going to try for a brine liquid. Your timing is impeccable!
