I have always loved Chef Paul Blackened seasoning but getting hard to find in stores. I did a blacked catfish using Zatarain's New Orleans Style Blackened Seasoning last night and man was it salty! I can get chef Paul from amazon but maybe time to just make my own? Anyone have a recipe that they really like?
 
It seems that all commercial blackening seasoning is way too salty. Even the low salt seems too salty. Here's mine...
  • 3 TBS paprika
  • 2 TBS garlic powder
  • 2 TBS onion powder
  • 2 TBS ground thyme
  • 2 tsp cayenne pepper
  • 2 tsp black pepper
  • 2 tsp oregano
  • 1 tsp salt
