4 am comes really quickly

It's hard in a small pit to smoke three pieces at one time.. Heat is even side to side but top rack to bottom rack no so much

Ya know I'm not really seeing the forest from the trees. So I bought a cryovac twin butts from SAMs. Both 8lbs but one is like 1 1/2 inch thicker than the other .. So that's why the IT Is different..duh!!

Update. First butt hit 205 wrapped and in the cooler.. 2nd one at 3:30. And brisket not far behind

13 hours and all meat is in the cooler
