Ok the wife is at the store right now picking up fresh wings for dinner so who has the best smoked wing recipe for us to try???
 
Almost all my chicken wing recipes start off with a 12 to 24 hour drying time in the fridge so the skin will be crispy. I will use a marinade in Italian salad dressing in a pinch. What works best for me is some distance between the grate and the coals, I sometimes will cook wings for close to an hour.

We've been going with this glaze for a while:
1/2 cup Pineapple juice
1/4 cup Honey
1/4 cup Rice Vinegar
3 tbls Dijon Mustard
1 tsp Red Pepper Flakes
1/2 tsp Sesame Oil
1/2 tsp ground Turmeric
Simmer for about 15-20 minutes and let cool.
This late in the day it's probably too late, though...
 
Scarbelly (RIP) wings if you like pleanty of spice.

I go simple.
I season with Salt, Peper, Onion, and Garlic.
Then I toss in any sauces I or others want or have the sauces on the side.

With smoked wings sauce is usually BBQ but some hot sauce happens. Many people just eat them as is or some even just use a little ketchup on the side. This provides amazing tasting wings with max flexibility :)
