Well as others have stated I'll be trying to get this cut at some point. That is a must try. Fantastic job Jeff!!

I've had pastrami from navel, it makes brisket point pastrami seem cheap and inferior. Tis NOT for those watching fat intake but shaved and steamed and piled high... OMG

Had it in some sandwich shop in either Bloomington or Indianapolis Indiana back in the 90s and I've never forgotten it. It came with a big 32oz or so schooner of beer and I needed every drop to cut though the richness.

Friend of mine owns a butcher shop. Just asked him not long ago about trimming me out a navel.
I was thinking pastrami or beef belly bacon. Now you got me really thinking it through.

Looks great but with at my age and diet would be to fat for me. The local Amish market near me sells beef bacon.

Cant say I have ever seen a beef belly smoked. It looks fantastic Jeff. Congrats on the double spinner ride!

Never heard of of it or never requested the cut?
Talk to your local butcher about special cuts of meat.
They don't necessarily have to kill on site. As long as they get full sides you can get any cut.
Sadly, depending on your area, many cuts end up in the grinder as they are not requested.
