Beer Can Smoke Chicken

I was inspired by someone else who just did a beer can smoke...
I've always loved beer can chickens on the grill, so I couldn't wait to try one smoked as well. This has to be the best chicken I have ever made. Crispy perfect skin and fall off the bone moist meat.
I used apple chips for the smoke.

I drank down half the beer, and then filled the can back up with Soy, Teriyaki, Worchester and Red Vinegar. Just did the outside with a dusting of Paprika, Salt, Pepper, Garlic Powder and Parsley.

This was done last night. I couldn't get the camera quick enough before my fiance started to hack away at it.

Dude - Did it at 225* for about 3.5 hours in the smoker and then about another 1 - 1.5 hours in the regular oven at about 220* until I got an internal temp of 180* in the thickest part of the breast.

THIS IS THE SMOKE WEEKEND!!!! Chicken yesterday. I got my first Fatty on now (pics to come later) and I got an 8.5lb Butt rubbed and mustard' waitong for tomorrow!!! WoooooHoooooo!!!!!!!
 
Yeah, the skin came out nice.
No, the rub was dry.. Everything that I mentioned in the first post.
Oh duh... A little spritz of pam on the bird might have had a hand in crisping her up a bit. Forgot about that.

Truthfully, I had no idea what to expect. Never did chicken on the smoker before.
 
Good looking bird. I did one a couple weeks ago. 1st time I've done one on a smoker. I'll never do them on the grill again. No comparison in taste!
 
Congrats on the cool bird smoke! I've never gotten crispy skin on a low & slow smoke. My hat's off to you.

I do the pam thing on any poultry now, don't bother with anything else for spritzing.
