I picked up a couple of 7 lb chickens the other day. The one on the right is rubbed with evoo and a seasoning called Roastmary from a place called The Rosemary House. It has rosemary, garlic and salt listed but there are other ingredients that they don't list. The one on the left is rubbed with evoo and Fox Point seasoning from Penzeys. It has salt, shallots, chives, garlic, onion and green peppercorns. Both are used here on a regular basis. Used cans of lemon/lime soda for the liquid.

lol, Looks like they're dancing in the above pic. Used red oak, smoked at 325 for 5 hrs. Vultures were hovering so no pics of them sliced. They didn't last long at all.
 
Gorgeous looking chicken. I haven't had lunch yet and those got my stomach growling.

I laugh every time I pick up a seasoning blend and they list a few basic ingredients and then comes the infamous "spices".
Salt, sugar, paprika (for color) and SPICES! Very clever...

What were we talking about? Oh yeah...awesome looking birds Dawn, looks like they turned out great!
