Pulled a pork butt from the freezer the other day, gave it a good injection of apple juice, butter, rub and a "dash" of bourbon, then a good coat of mustard and heavy coat of S.P.O.G with a bit of chipotle powder.

Got up this morn about 630, started up the smoker, at 275 today to give it a try. Smoked it with some apple for about 10.5 hrs.

Made some homemade mac,and cheese with both smoked gouda and smoked cheddar, also tossed a few ears of corn on the grill.

Made up some vinegar sauce and dinner was on.

Gotta say, tried S.P.OG. a few times now on butts and really like it.

That looks really good, one suggestion you should have posted this in the pork section so more eyes would have been able to enjoy.

Came out pretty tasty, will say I like it better using hickory vs applewood.

Thanks for the tip about putting this in the pork section, next time I,post something like this Ill put it there. Figured since Im using a MES figured this would work as well.

No problem posting it here. I usually post in the forum that reflects my smoker. You can edit your original post to say which Mes 30 or 40 you have if there is a question. Either/or is ok.
