Last week the wife and I celebrated our anniversary by going to a place called Texas de Brazil. I am here to tell you that it was fantastic! My favorite meat was a beef short rib that was so tender it was like eating warm butter! I decided that I had to try and make some for myself and here is my attempt.

I first mixed up a little something to inject. It is just beef bouillon and some prime rib rub.

I tried to saturate the meat with the injection sauce.

I then coated the meat with some of my rub.

Onto the smoker at 200 deg for a very slow smoke. I used some Jack Daniels oak barrel smoking chips.

Almost done! This is after about 7 hours of cooking.

When the ribs got to 190 deg I took them out and let them rest for a short time.

These ribs were so juicy and tender they even surprised me!

All and all a perfect meal! I got to do this again!

Wow awesome pics! This one is a must for me since it's been too long since I had some savory beef ribs!

looks good!  I usually cut them apart to cook faster, but I may have to try them as a unit!  I might borrow the injection idea too.  So far all I use is equal parts salt, pepper and paprika for a rub
