Busy cutting and getting the meat in the cure for tomorrow. Had a bunch of round steaks and roasts from a side of beef. Invested in a slicer and we are off to the races!
 
And I took a bunch of stew meat and "shredded" and put it in a bag with the cure and spices. Will put it on parchment paper in the smoker and it will be nibbles :)
 
Nice , and the nibble should be good but watch  for them getting too dry ( like munching wood).
