Beef Heart Summer Sausage

Does anyone have a recipe for beef heart SS?  I have a couple of beef hearts and no one in the family will eat it, well willing any way.  I was thinking of making SS to disguise it.  I also have plenty of venison. This is a first for me on SS so any recommendations will be appreciated.  Thank in advanced!!

FJ, Why not grind it and use as a ground beef ingredient in the SS ?
