So I am work at bbq joint and we are trying to reuse most of the brisket trimmings. I have already done a good kilbosa using just the beef fat and the brisket trim. But not sure what other styles would work for this? I don' want to have to add anything but the trimmings. Any ideas?
 
My goodness any sausage would be good, I just made burgers out of the trimmings & they were the best burgers I have ever eaten!! I think even the sausages that would normally use pork would be good. How about Hot Italian sausage, or Andouille, & the list goes on!

Perhaps something that typically has a lot of fat in it. I would be curious to see a dry cured Spanish chorizo type.
