A note for Jmedic. I did not foil these ribs. They were in the smoker for 5 hours at 225-235. The flavor was fantastic. They were not exactly "chewy", but they did have some bite. I liked them this way. The family would like them to be a little more "falling off the bone tender" so next time I will foil them for about an hour before I glaze them.

well so will converse with him and see if I can get some racks to try.
What are the crappy or should I say leaner beef racks that I see? Are those a beef spare per se??
Oh Man! Those look yum mee! Nice job, and great q view. I know what ya mean about alot of charcoal today. In Mich, it was in the 40s and windy all day. Used a 20 lb bag of RO lump for a 10 hr smoke!
