Any bbq caterers out there?. I've only been smoking for about a year but I would like to some day be able to do some catering with it. Im still working on my recipes, temps and times. And I know its going to be a while before this could happen. But any info you guys have about kind of equipment you use and how the business side works would be much appreciated.
 
Do us a favor and stop into Roll Call if you don't mind so you can introduce yourself and we can give you the proper Howdy we like to give to new members. Now as far as a catering company there are a few folks here that do cater thing and some new caters here to In fact my wife wants me too look into it also.

bbally does a lot of large gatherings with his catering business. chisoxjim is getting his up and running. I know there are others, but those two come to top of mind.

for large amounts I use a old hickory sse, go up to 600#. cookshacks for smaller amounts. Its a lot of work but its good money.
 
I've done jobs upta 230 folks usin a GOSM an a couple a UDS's. I pre cook as much as I can an the rest is made on site. Always pre make up my sides cept the beans which get made up in dutch ovens on site.

If yer gonna go fer it big, yer gonna wan't a good size stick burner an a trailer set up fer haulin all the gear around. Amazin sometimes how much stuff it takes ta get the job done.

Make sure ya check with yer local health inspector on what ya need, many places will require ya ta have a commercial kitchen which ain't cheap. Some will let ya ren't a kitchen some won't.

Here, I can do much of it under a chef fer hire protocal which gets me outa havin a commercial kitchen.

Now, a concession trailer is a whole nother story an is the way were sorta headin cause the restrictions er alot less.
