Yeah i know the area. We live in Ephrata for 12 years and when the kids split we had a house built in Lehighton in the hills. Still own it daughter live in it.
 
I have a bunch of goose in the freezer as well but not sure what to do with it?  Any suggestions?  Have any good recipes?
When i did the 250 lbs of Goose couple years agi, I found that the goose works well like other game meats. I did however use some Trehalose to take the fowl taste out of it. Here is the link, From LEM

Mix a fat cut in as you would lean GB or venison. Also if you can soak the goose in some slightly salty water to draw some of the blood out. (bout 3 -4 hours)
