Yesterday, I smoked the latest from Jeff -- bacon-wrapped chicken thighs. Everything went well, except it took 4 hours to get to 165oF. They were still tasty, but the bacon had no flavor. I used regular-cut Farmer John's bacon, Should I have used thick cut? Normally, I get the thicker cut bacon from Albertson's. The other thing different was the BBQ sauce -- Pigs Ass -- a favorite.

I planned to have them done by 6:30, but it was past 8:30 when I took them off the smoker. Being almost past my bedtime, I still managed to scarf down 3 thighs. Very tasty.

I use a Green Mountain, Daniel Boone pellet smoker which is ok, but temperature is difficult to control at times.
