Just showing off the end product.
Cured 8 days
9.5 lbs pounds pork belly
kosher salt
pink salt
dark brown sugar
real maple syrup
distilled water
pepper
Then formed pellicle
Smoked 7 1/2 hrs with maple
 
Nice!! I've only recently gotten into curing/smoking my own and with the help of the good folks here, especially Eric @SmokinEdge, Doug @DougE, and John @Fueling Around, I'm hooked or rather gut hooked as us fishermen say🤣. Got 2 bellies curing right now and will be ready to smoke in a couple of days...
 
That is fantastic pork belly.
I've passed the last few times at Costco which is my only decent source for belly at an acceptable price.

Visited some relatives last weekend and got the request for a slab of dry cured belly.
