[/IMG] My pork belly does not appear to have properly cured. Removed skin, Mixed #1 cure and sea salt at recommended amount. Did a dry rub on both sides. Put in icebox for 8 days in zip lock flipping each nite. I noticed very little water removal. Is it still safe to fry over the next few days and eat? What did I do wrong? I also did a cold smoke for three hours.
