Wind was bad today so had to do this belly, buckboard and Black Forest hams in the Mammoth. Many ways to get them done. This is actually working pretty well, a little warm (170-ish) but color is looking good. This is about 4 hours in. IT is high teens to 120 right now. It will work.

That looks awesome so far Eric. You still liking that Mammoth? I have been tempted a few times to pull the trigger on one.

Rolling with the punches , I plan on doing brisket tomorrow and the weather looks sketchy now. I may have to do some rolling of my own

YES! They got to hot on the surface. But given the circumstances these turned out fine. 145 IT. They will eat perfectly. Don’t be afraid to finish smoke in a pellet grill. It’s not near the quality of the smokehouse but still good eats.

Thanks Justin. The Mammoth is great. Not without flaws but is a good running pellet machine. My biggest beef is the paint fades in the sun very fast, no clear coat.
