Guess I should introduce myself first. I am Jason and I live in Wilmington NC. Originally from Il but have been here for 11 years. I have been watching alot of food network and the like and wanted to try my hand at smoking for a while but never sure where to start. When my gas grill finally gave out and had to be replaced I purchased a Chargriller that I added the smoker box to. I have smoked several things over the past 3-4 months preping for the turkey at Thanksgiving. That turned out excellent. I brined it for 9 hours and smoked it for 15.
Being in Southeastern North Carolina there is Barbeque every where but at the beach where we live none of it is smoked. I have 15 lb of pork shoulder on the smoker now. Watching and waiting!
