I haven’t smoked meat in ten years or better. I got a wild hair and called in a few on Craigslist and they either sold or no answer. Hell with it I’ll build one.
Requirements = has to be small and has to burn wood stiks.

True meaning of starting out small!
Actually I think that's a Perfect Portable unit.
 
Thanks for the encouraging words. I wanted an offset but I am the only person in the house that likes Smokey meat. Reason I’ve just not tinkered with it in so long. I need to fine tune a few things I figure. When @ 275 the far side was dang near 225.
I used a big thick diffuser plate and got it balanced @ 250 both sides. Smoke was perfect but I had to use a small fan to get good draw. Spatched chicken was salty and little dry but made good salad and tacos. Whole chicken was pretty alright. Ribs next I figure. I really Wanted something for football season but. Made everything from scrap and $36 of 1/4” steel for the box. It seasoned up better than I would have thought after 2 burns. Best part is it burned for 4 good hours on a handful of cheap lump and one hickory stick. Threw in a small piece of cherry to boot.

Well crap. Got more than enough smoke in these. Texture and tenderness was spot on. The age old saying you gotta make bad BBQ before good. I definitely got the bad outta the way. Bean recipe I kinda threw together was pretty gangster.
Bush pintos
1/2 jalapeño
half sweet onion
2 cloves garlic
2 pieces bacon
1 small apple sliced
Thin slice butter.
Stew everything down throw beans in last add apple juice to liquid level of preference.
Beans were not sweet but I could see added benefit of some brown sugar.

Boneless pork butt I got from the Asian store. Turned out really well. Cooked at 225 unwrapped then broiled it for 5 minutes to get skin super crunchy. Things was demolished by all.
Simple pork rub with Malcom Reeds mop recipe using same rub. Really happy with the outcome.
