i prepared a rack tues nite, rub down with mustard, dry rube and wrapped in celephane and put in the fridge. seems plans has changed on smoking them. how long can i leave them in this stage??
your right Al. i have always thought they have a better smoke taste after resting in the fridge..That's funny you say that, because I like my ribs the next day cold, better than right off the smoker!

I can't say I like them better than right off the smoker but I sure don't mind them fresh from the microwave. The best part is it drives my co-workers bonkers when the place starts to smell a like small smoke house XD.That's funny you say that, because I like my ribs the next day cold, better than right off the smoker!
