i prepared a rack tues nite, rub down with mustard, dry rube and wrapped in celephane and put in the fridge. seems plans has changed on smoking them. how long can i leave them in this stage??
 
I would imagine you can leave them as long as the original use by date. If you fridge is good and cold you can maybe push a day or more beyond that but I would cook them when you get the next chance once you hit the use by date.
 
Depends on how much salt is in rub the longer they sit rub will pull Moisture out of Meat and make it salty a day will be fine much longer I say no if you have to throw them in crockpot and cook all day !
 
thanks all, think i will go ahead and put them on now. nothing wrong with cold ribs anyways...

I can't say I like them better than right off the smoker but I sure don't mind them fresh from the microwave. The best part is it drives my co-workers bonkers when the place starts to smell a like small smoke house XD.
 
I wouldn’t leave them like that more than a day or two.
I’ve found that throwing ribs in the oven on broiler setting for a few minutes does the trick. Better than the microwave for sure.
