Here is a recipe that is a family favorite. No special dinner, Christmas, Thanks Giving or other would be complete without it.
Our Favorite Corn Casserole

Ingredients:
1 small onion
1/2 Bell or Poblano pepper
1/2 cup butter
1 can whole kernel corn
1 can creamed corn
3 eggs
1 8oz. box Jiffy Corn Muffin Mix
1 cup sour cream
2 cups grated cheddar cheese

Instructions:
Dice onion and pepper. Sauté in butter till tender, set aside.
In a large bowel, mix remaining ingredients, reserving 1/2 of the cheese.
Stir in the sautéed vegetables. Pour into a buttered glass baking pan or casserole dish. Sprinkle the remaining cheese over the top and place in 350 degree oven till golden brown. About 45 min. to 1 hour.
