I see a lot of pitmasters using phosphates injections to inhance their meats.. Good idea , bad idea ?

Not me!!!

If I am paying more for quality(free range, grass fed, organic), the addition of phosphates is something I always avoid.

When I go for the best possible deal/price, most of them have phosphates added to retain moisture(and weight).

Several studies have indicated the addition of phosphates to foods are considered carcinogenic. I'm sure there as many studies that refute those findings.
