Anyone grinding briskets for HB meat out there?  I know a chuckie is preferred, but I was wondering about yields on briskets.  Briskets are $2.18 a pound, while HB is $4.44 a pound locally at Wal-Mart.  I am curious if anyone has ground any briskets and what nthey got as far as yield.  Is it worth the time?

It is worth doing based upon price, if you can get 75% yield from the brisket.  I am on a stay-cation next week here at the house(my wife has a teachers conference to go to, so me and the lil' one will be here), I might pick one up and get a yield on a 14-16 pound brisket.  Might as well grind up a chuck roast as well.

I used to get brisket for $.79 a pound a few years ago and trimmed some fat off and ground it a lot. It was excellent. Don't see it at that price anymore so don't grind it up much anymore.

Hi Bruno

Last time I used 2 lbs brisket and 2 lbs of chuck, hamburgers came out great according to my wife. For me the taste was good texture wasn't soo great.

In the NYC area lots of speciality hamburger places use brisket in part of there hamburger meat.

I usually mix ground brisket with venison when I am processing a deer.  I do about 75% venison with 25% brisket to give it a little fat to help is hold together.  Never had any complaints.
