South Louisiana-Yes, it is HOT
Looking to make some as my next batch. I used the search function and found a bunch of summer sausage, but no smoke sausage. I don't want to make summer sausage, I want link smoke sausage.

Thanks in advance.

I know when it comes to the store bought stuff, I can't actually tase a difference between what they label "smoked Sausage" and Keilbasa.
There are several Keilbasa recipes floating around here.

I don't have a recipe for you but also check out recipes for Texas Hot Gut sausages. They often come in Jalapeno and/or Jalapeno and Cheese varieties. This is the kind of sausage you often get in real TX bbq joints :)

Here's a recipe in the sausage book I have. I haven't tried this yet - if you do please let me know how it goes! Recipe is from Len Poli.

Interesting recipe but 4 cups of onion powder seems like alot but I've never made it so I don't know if it's to much

Swamp , the recipe I talked about is different , uses cure . I didn't post it because it's copy righted . You can find it on Poli's web sight .

Noted, I did look at the recipe. It helped me zero in on the amount of sugar and jalapeno. Thanks for posting. See my thread, I'm satisfied with how it turned out. On the smoker this afternoon!
