Since the forum was down, and I was needing some reassurance about smoked meats, I just had to smoke this turkey... Darn good eating too.... I trussed it to help with getting it in the bag and to create a bird that "should" cook evenly... After the smoke, I cranked the heat up to max, 275-300 ish, and it crisped up the skin... and finished the cooking cycle to get the bird up to 170-175 ish... Legs were flexible.. Joints were cooked.. And then I ate it... Pitmasters Choice pellets, from Todd at AMAZIN Products, did the job nicely.. Mild, good flavored smoke... The mailbox mod and flex aluminum ducting along with the air holes in the MB door seem to eliminate the creosote flavor... The bird was "enhanced" and dripped a lot.. I wish they didn't sell enhanced birds so I could do my personal injection and flavors...
