I have searched and searched concerning Brisket smoking overnight, however my concern is the safety aspect of it all. I am worried like hell that something is going to go wrong and burn something down.

I have a gas camp chef smoke vault, installing a needle valve to help control the temp more consistently, i am also getting another wireless multi probe thermometer to cover chamber temps, i would use this for over temp alarms, say 300°.

in my eyes i would get up every 3 hours to replenish wood for smoke and water if needed. I am probably over thinking this but, here in so cal stuff can burn quick is something goes wrong.

chime in i would love to cook brisket overnight! last one i was up at 330 am and couldnt return to sleep.
 
thanks for the links. the brisket I made over memorial day was 14 lb packer. it took all of 12 hours at 250 and 30 min in the cooler. I would have rested it more but the natives were restless.

the 330am wake up call was brutal. I am thinking of trying it again but this time over night. start at 8pm, by the time it hits stall I would be asleep. and then by morning it should be ready to pull.

I am more after safety of the system. I am getting another temp prob. anything else I maybe missing
