Amish style summer sausage.

Hello everyone,

I am looking for a recipes to make Amish summer sausage. The one that is heavily smoked in a muslin bag and is fairly dry? Been wanting a recipe for quite some time without success.

Thanks for the tip ssorllih. The stuff I'm looking for looks more like this. It's made in southern ontario around the St-Jacobs area.
