I have an electric smoker and I'm looking for a better way to keep the wood chips smoking longer rather than turning into charcoal in an hour or too.  I read a bit about the amazn smoker.  I don't under stand how it would work with a hot smoke.  Would I set it on the burner?  Would I leave the burner off but then how do you control temp?
