3,800 ft. is no problem

When you hit 5,000+, the air gets kinda thin

I spent some time with Todd on the phone last weekend.  Thinking the Amazn Pellet Smoker was straved for air sitting on the floor of the 2012 MES 40inch. I went to HD and got 4 pieces of tile to move it up by the heating element. I am smoking a turkey tonite so I will report. The test run we did was great so I am hoping.

Just checked the bird. Been on the smoker 5 hours, I have burnt 1.5 lanes on the pellet smoker.

It sounds like you need a vent of some kind on the bottom. Not enough air flow. Your air flow must be real close to being enough so it allowed the pellets to burn as far as they did. I have a homemade smoker and had the same problem at first. I put a vent on the side near the bottom that I can open and close. If I leave my vent wide open, my pellets or sawdust will burst into flames. The smoker needs to draft somewhat to bring in fresh air and exhaust the old smoke.
 
 
Turkey finished around midnite last nite. Only brunt 1.75 rows of pellets. I am hoping since we have gotten it this far, is that all I need to do is to find the happy spot for the chip loader and tray. I think probally in the end the water drip tray will need to be modified. I think the pellet burner need to get a bit higher up. I will probally try to modify the extra chip tray I have to fit in the water pan area.

The AMNPS will fit just fine over the water pan. I will put the SS wire back on for a tent, since it will then be exposed to meat juices. Suppose to start raining here today. So this will probally be a Saturday test day. I also recieved the retro fit chip tray and hood/load. I am going to replace that today and clean grates. I dont know what the difference is in the two tray/loaders but will look and see if I can tell.

Glad to see you & Todd got it worked out. If you're referring to the chip tray and housing assembly, you'll find the differences in this thread. http://www.smokingmeatforums.com/t/128963/2012-mes-electric-smoker-recall  In the pics for the Cabela's MES 40 they show the chip loader chute with a "notch" cut out of the top edge by the handle for air flow. Mine didn't have that. Have a Smokin' Thanksgiving!!
 
I just put some smoke on Turkey Lurkey using the AMNPS ..Worked just fine . . Turkey was still froze for the most part so knew I couldn't do it in a complete smoke so I put it in for an hr.& half to get a smoke flavor .

It was starting to turn a nice smokey hue . I took it indoors to finish up in a Halogen oven . . What is That ? You say:jaw-dropping: It.s... well... goggle it > I can't explain it. .Sorry no Qvue . Any way it should take five hrs. in it. Yes I'll be eating really late . :~( This is a 14# Organic bird . :~) Will follow up with how it went down later

Edit : I failed to say I had it in the MES at a temp of 225F . Just barely used any pellets, no wood chips . Even after shutting down all vents it still wanted to smoke...I put some water on it to save the pellets for a later smoke. Some of the pellets come apart after getting wet but should dry out . I heat the MES up to 275F before I using it any way so they should dry on out after that .
