had an all meat cook off over the weekend and did fairly descent.. sorry i did not get many photos but ill share what i have and explain what i did with each entry
1st entry...fresh Alaskan salmon...
brine mix
1 gallon water
2 cups dark brown sugar
1/8 cup onion powder
1/8 cup garlic powder
1/8 cup habanero hot sauce
brined for 6 hours quick rinse and pat dry with paper towel
sprinkled on a bit of onion and garlic powder, cinnamon, chili powder and dark brown sugar
let set for a few hours, covered with foil and into the fridge for the night
pork shoulder
used some mustard for the base and coated with Jeff's rub and into the fridge overnight
brisket
coated with EVOO and coated with McCormick Montreal Steak seasoning..wrapped up and into the fridge overnight
i also put together a batch of bacon wrapped cordon bleu...sorry no pictures of that in the making..
but i did soak the flattened meat overnight in zesty italian salad dressing
used brown sugar ham
pepper jack cheese
4 slices of ham per chicken breast
2 slices pepper jack cheese per breast
and a small hand full of chopped green onion
wrapped bacon around everything and gave it a good coating of light brown sugar
started the pork shoulder and brisket up at 7 am at 225 degrees and took both to internal temp of 170 and double wrapped in foil and back into the smoker
around 1:30 pm i put in the bacon wrapped cordon bleu at 225 degrees also
the salmon went in at 2:00 and got mopped every 1/2 hour with a mixture of butter, lemon juice, and honey
around 3:00 the brisket at internal temp of 195 and pork should at 205 internal temp both got pulled out and wrapped in a towel and put in a cooler for an hour and a half.

all in all i got 3rd place on my pulled pork and 5th with my cordon bleu...not bad out of 17 total entries
i was really surprised that my brisket didn't place, it was juicy and very tender with an awesome flavor
the main thing with the whole day, Huskers pulled out another victory and had a great time with all my friends and fellow cooks.
