I can't imagine two pieces of meat being so different. I bought two pieces when Aldi had a few for $3,49/lb.

Both pieces looked similar, about 3.5 lbs each. As I posted earlier the first one was done on my WSM.
This time, because I'm a tightwad I used the kettle because with the SNS basket, a couple handfuls of cowboy briquettes will burn bout 5-6 hours. Added one chunk of pecan, as I didn't want heavy smoke. Kettle behaved nicely running steady at 250-265. Meat on raised grate opposite of coals. ran to 175 then removed and wrapped in tin fole this time. Returned and let cook to 203. Took entire foil bundle and meat to cooler over night. next morning I put it in the refrigertator to chill for slicing. Holey moley what a difference a piece of meat makes. I can only guess , as both were cooked with same profile. Got out deli slicer and these things sliced like butter. Now I'm pissed I didn't buy more, because all a pastrami sandwich does, is make you want more. I'll be scouring local stores for post- St Patrick's day sales. Since deli Pastrami is over $20/lb down here, I think anything under $6/lb will get confiscated by me.
