I have been asked to Smoking pork butts for Christmas dinner. I'm happy they asked me. I want to do a good job. I have a new pellet grill, the brand is Z Grill. I have used it maybe 4 times. I will be smoking 2 butts, both 8lbs. I want to smoke slow, I'm thinking around 12 to 14 hours. I am using dry rub only. not planing of moping or anything like that. I would like a nice bark on the butts. Do I leave the fat side up or dose it matter. The temp I plan on using is 225 during the entire cook until it reaches 190, should it wrap in foil at some point. Any tips or trick would be helpfully, This is my first post on this forum.
 
225 is a good temp to smoke the pork butt at. When it comes to wrapping, people have different opinions but my experience smoking my first pork butt a couple of weeks ago was very good and I wrapped from the internal temp of 165 to 190. I finished it off unwrapped for a short time until it hit 195 to firm the bark back up a bit. I also only used a rub and did not mop at all during the smoke. As for time, every piece of meat is different but for two butts of that size, I would say your estimate is pretty close.
