Hi everyone! I would like your advice for a large smoker session. I might have an opportunity to smoke for a restaurant during a special event. I am comfortable smoking spare ribs but for this event I would probably have to pack my smoker to the brim. Using a combination of stand up holders and top shelf I could probably run up to 28 full racks in my smoker (an offset Luling). What can I expect loading a smoker that much? Difficulty to get up to temp? Do I need to rotate the ribs throughout the smoke?

a full smoker is a happy smoker, I would rotate them every couple hours unless you know your temps are consistent through out your chamber. it may take a little longer to get up to temp but I think a full smoker keeps temps more stable once up to temp.
