i need to increase my heat
Do I add hot firey coals that are already hot or try to add charcoal to already hot fire box?
someone answer fast as this is my first pork shoulder and I dont want to screw it up

thanks
I am already making coals to add
yes I will go roll call now

Alternatively, add a few unlit coals at a time every 20 mins or so and the temps never drop and typically there is no problem with white smoke/creosote. Just don't add too many and start to smother things. That is, if you have an offset, doing this with a ECB didn't work too well for me.

wow I feel stress in the air!! maybe a glass of wine & some cheese in order?
