Trial an error then!!

There are so many variable at play, Temp/Time/Amount of smoke/ types of meat/fish the list is endless. I believe this type of thing is best used for smoking fish or applying a flavour to something BEFORE it is then cooked properly. I'm not saying you couldn't do it, I'm sure you could, try putting charcoal in the bottom or whatever, but I'm a relatively experienced cook and I think you'll struggle to do anything other than smoke stuff with it prior to cooking it properly.

If you want to dabble, just try placing some smoking chips, on the coals of your existing bbq and close the lid to help maintain a lowish temperature. Google is your friend, look at the methods for using a cheap bullet smoker and give it a go with your equipment!! :)

I'm sure your basic bbq with a lid is more than capable of smoking to a degree, either with or without the M&S added, others far better than me have posted photo's all over the t'interweb, case in point of a method you could modify for your circumstances below. Good luck, and I'd be really interested in photo's of how you get on.

I suggest surfing this message board. There is a ton of info and any specific questions would be a lot easier to answer than the general how do you smoke food?

Suggest you get a few recipes and try them out and then go from there. A lot of it is trial and error and experience.
