So it has been almost a week since I was on the site last, went out of town a few times and have been breaking down the garden and prepping the ground for next year.

Firstly I know there is no way I could ever get caught back up on the posts and greeting the new members so I want to say hi to any new members.

Definitely made time to smoke a few things though.

Boneless CSRs slathered with chipotle mustard and chipotle rub



some beef ribs


chipotle smoked egg salad, that's not paprika just the shaker I have my rub in



Younger sister was going down to NC to visit another sister so I made her up some goodies

armadillo eggs using pepper shooters




Burnt ends, she has never tried them



Also sent down some pulled pork and homemade apple butter.

Glad to be back on the site, I know it was only a week but it really does seem like a lot longer.

Great to have you back, Jim! real nice food you got there, and those armadillo eggs looked outstanding. What sausage did you use? Anchovies and Mozz, I'm guessing from the looks of them? Dang, I gotta try them too!

Glad to hear your prepping the garden for next year~ never too early to start. Hang in there, soon you'll be planting again!
 
Thanks John, just got some garlic in the ground today, should be ready sometime early or mid summer.

The armadillo eggs were pepper shooters (cherry pepper stuffed with proscuitto wrapped provolone) and wrapped in asome regular Bob Evans sausage, normally I would use JD bold but it was going down to my sister and I thought that might be a bit too much heat for her since the peppers already have a bit of a bite.
 
Great looking food you got, especially the beef ribs, burnt ends and armadillo eggs...

Welcome back Jim from the depths of the garden. I'm glad your back and with some good food too. I really like the ribs both the beef and the pork boneless. Now lets go to the eggs salad and with chipotle now that sounds fabulous and then you throw out the stuffed eggs now I like them too. Something about the peppers stuffed with proscuitto and provolone all wrapped in sausage the only thing missing is the bacon. Then they would be armadillo egg moink balls.
