A Nice Peanut Coleslaw

A couple weeks ago I made some coleslaw and brought it to my parents house along with some BBQ from a great place that just opened up near our house.

Mom later said she kept the coleslaw but returned the container. I guess she really liked it.

Tonight I made an even better version that I think is good enough to post here.

I used the mandolin/chopper that the enablers here convinced me to buy. It is worth it. The mandolin made slightly larger pieces than the food processor.

I still used the food processor for the carrots after skinning them. That might have been tough to do on the mandolin.

1 medium green cabbage
1/2 medium red cabbage
4 carrots
1 cup of peanuts ( Planters Sweet and Spicy used ) pulsed in blender

1 1/4 cup of mayonnaise
1/3 cup of cane sugar
4 tablespoons of Red Wine Vinegar
2 tablespoons of black pepper
1 tablespoon salt
2 limes juiced

Cut up the first section then mix in a large bowl.

Mix the other ingredients in a smaller bowl then mix it with the first part.

It was kind of late so I only tasted a couple spoon fulls but it tasted great to me.
 
I don't make slaw very often, but that looks interesting. I'd hafta scale it down but it's probably gonna happen. Thanks for posting!
