had my brisket marinating overnight, did the rub this morning, set my temp to 225, and the timer for 12 hours, filled the water pan, and set the brisket and bologna in the smoker at 8:30. have been adding wood chips about every hour-hour and a half, just opened up the smoker to check the water, and brisket looks like its cooking, but not like it would on a charcoal smoker, this is the first time using my electric one. Is this a normal thing?
