Im doing my first pulled pork on saturday and I have a couple questions.

How long is the pork on the grate (what temp) untill you wrap it.

Whats a good choice of wood I have sugar maple, apple, hickory, mesquite and alder and wine barrel planks.

Bring it to 165 and then wrap in foil until it hits 200-205.
For wood I wold go with either the maple, apple or hickory.
All three would be nice and tasty on the pork. Guess depending on what kind of rub you are using and which wood would best compliment it.
 
I do 10 hours open, and cover for four to six more depending on the bone pull or if boneless the meat shred factor
