First morning below 60 here. So what a better day to clean and use the smoker.

Have a chuck roast in. Going to run high for a few hours then off to the souv vide for a nice hot bath.

2.5hrs in at 300ish. Pulled out and into the juice. Decided to braised it the rest of the way instead of sous vide.

Was that the cook's sample bite? All looks good from here.

Even with the cool temp you had a better day than me. I was hoping to smoke a rope of sausage, but just not happening in the drizzle.
