Wow, cuts bolts with no damage to the edge and a 1" rope with one swipe. I thought you only see that stuff in the movies. That guy is good.

I have some really expensive knifes but I would have to stop before I would spend 300.00. I have one knive a Henkal twin that retails for around 150.-175. bbut I didnt pay that much for it.

I'd definitely buy them at the sale price of $379. Remember, that's williams-sonoma too. With a little shopping, you may fine the same set for even less.
 
So how many of his knives do you have Rivet??? I know you love them. That was a great video as well. I am studying that method right now. I figure if I can get about half as good as he is I will be happy. Just amazing with the bolt and shaving after wards. The fine line that guys is walking with making the metal strong yet pliable is amazing

I have been lusting after a very cool knife from Kuhn Rikon's Ken Onion line but this is very cool. Maybe a hint to all the kids for my retirement gift - LOL
 
Wife said I could order a Whole set of them from my new address ..... if I wanted to live somewhere else. She is so understanding.

I have a bunch of Henckels Knives, and some of the best I have are the Twin Cuisine series. The boning knife is scary sharp, and with a little care and an occasional steel it stays that way. You won't regret getting them. In fact, last night we hosted some friends for dinner, and they were making margaritas and needed a knife to cut limes and they used this one. I cautioned them that it was sharp, and after using it, they were simply amazed at how sharp and the heft and balance and solid feel of it. Good knives are indespensable.



Mrs. Engineer got a bunch of them when Linens and Things went belly up, so we got them at a great price. I even have a slicer that I haven't unwrapped yet as I need to get a different block.

Another suggestion that I have is that if you keep an eye out at TJ Maxx or Marshalls they will occasionally have really good knives (the Henckels twin four star that is shown here) at a good price as well. Mrs. Engineer picked this up for $39.99. They had a bunch of others as well. Again, I need a new block before I unwrap it, so it is on super secret backup reserve in my drawer.
 
Bob Kramer uses 52100 Tool Steel for his knives. This is a very hard steel suitable for making barrings and such. I have never used one but they look fantastic. They are hand forged, a lot of personal work by a master bladesmith, hence the price. Obviously very strong and flexible. Just guessing but they must be a bitch to sharpen

I have that exact block of twin cuisine knives. They are great. I don't think that the WS price is great. Bedbathandbeyond has it for 20 less

I'm also pretty sure that their 20% off coupons that they mail out all the time will apply to Henckel knives. That should knock it down to ~290. I would look around and you can find deals like this one.
