I have 3 good sized hams sitting in my freezer. They are straight off the pig not cured. Is there anything special I have to do before smoking these bad boys?
 
Do you want ham? If so they need cured.

Or just cook them for pp.
 
I would like to have atleast 1 for ham. I have never used a regular ham for pp. much difference from a shoulder?
