2nd brisket on the offset (and some fresh albacore)

I just smoked my second brisket on the offset. A prime brisket from Costco $3.19/lb. Started it at 6:30AM and it finished in 9 hours at 275 to 300 degrees. I used Oak, Walnut and Apple. Also had a nice piece of albacore that I needed to cook so that was lunch. Very happy with the results of both.

Very glad I upgraded to the Horizon. Fun to cook on and the results have been very good . Next up are a couple of racks of ribs. My next brisket will be in December. I ordered a Wagyu 20lb packer from Double 8 Cattle for $189 with free shipping.
