I did these for my son's Grooms Dinner on Friday. They were on for 12 hours on my Char Griller with SFB. The only mod so far is a coal box made with expanded metal. I used the Minion method with lump charcoal (Royal Oak) and 3x3x3" apple wood chunks. I had to refill the firebox only twice. The chunks seemed to get rid of the problem I had with temp spikes because they did not catch fire, they only smoldered. 235-245 the whole time.


They were wrapped and in the cooler (left) for about 3 hours before pulling. Amazing, fall off the bone, moist, easy to pull. I over estimated the amount needed for 22 people so I have about 7 lb. left over - darn.
