Started smoking later than I wanted today, so it will be a late night. Oh well. Picked this up from my favorite butcher, about a 12# flat. A very simple rub with just the basics; sea salt, black pepper, garlic powder, onion powder and chili powder. I'm using a combination of hickory, mesquite and apple chunks. Every time I add wood, I spritz with root beer. My wife uses it in roasts, so I thought I would try it on the brisket. Time will tell.

I am trying my first packer cut today. I used Jeff's Texas rub.
