7 lb flat about to go into my new MES30. I broke it in on a chicken so now it's time to try the beef. Used dijon mustard for a binder and put on some homemade rub minus most of the pepper. My wife doesn't care much for it but I love her anyway.
 
am new to smoking also, got some baby backs in mine right now, wanting to try a brisket, will keep an eye on this thread, best of luck. i cannot believe the knowledge and helpfulness on this forum, its outstanding...........................t
 
My internal temp has plateaued at 165. Part of me wants to turn up the heat and the rest is screaming NOOOOOO! I'll ride it out. Instead I'll have a beer.

The aftermath. It was good but a little tougher than it should have been. I think I know what adjustments to make. Overall I would give it a 6 out of 10. Good flavor but no smoke ring and just a little tough.
 
What IT did you smoke it to?

They are done between 195-205 OR until a probe slides in like room temp butter in several places.

It sounds to me like you just didn't cook it long enough.

Also, you won't get a smoke ring with an electric smoker.

But it doesn't matter, the smoke ring looks cool, but doesn't change the flavor.

I made an IT of 190. I agree with you it wasn't in long enough. I have gotten smoke rings before with electric just not this one. I'm still in early days with my MES. I smoked on an open pit for the last 20 years but recently moved into town and the neighbors kind of object to 20 hour smokes drifting into their houses. Not sure what their problem is.
