I saw these Armadillo Eggs on one of the threads here this morning and I was planning on doing them this weekend, but I couldn't help myself.

I will say that I did not go real low and slow due to lack of time, but I did use the webber with indirect heat and chips for smoke. They did take awhile longer than the pork, and still could have used a little more time but I couldn't wait.

I think I was a little too excited as I didn't pay much attention to complete seed removal. Hey thats why I am a noob. They were a little hotter than I would like but I will be doing them again.

yeah..........i was glad to do em this last weekend.......my first time.........man are they good..........i stuffed mine with yellow colored creme cheese........pray tell, your choice of stuffing?
 
I'm a sharp cheese kinda guy so my choice was a combo of Cracker Barrell Extra Sharp White Vermont Cheddar and some Colby-Jack cuz I like its melt.

The tang from the cheddar sets them off for me.
 
took a chub out yesterday with some peno's get some cream cheese today and some peno mustard for color planning this for tommorrow
