I saw these Armadillo Eggs on one of the threads here this morning and I was planning on doing them this weekend, but I couldn't help myself.
I will say that I did not go real low and slow due to lack of time, but I did use the webber with indirect heat and chips for smoke. They did take awhile longer than the pork, and still could have used a little more time but I couldn't wait.
I think I was a little too excited as I didn't pay much attention to complete seed removal. Hey thats why I am a noob. They were a little hotter than I would like but I will be doing them again.
