WOW!!! I've been thinking of doing something on the same lines. What you have created has "re-motivated" me. I've chatted with a few folks and looked at a number of plan ideas on the net. The fear of a gas flavor or after taste is the only thing that has slowed me down.

I think the only thing I would do in addition to what you have done is add a couple of adjustable vents near the bottom to keep those gas flames dancing happy, and burning clean.

Perhaps a couple of steel pipes with a ball valve on the outside.

Just a thought.
 
Nice job on the fridge. Finished mine this summer and love it.

What size shelves do you need. I used chrome shelving from lowes they were 13x231/2 fit perfect in mine.
 
 
TErwin - I found some Charbroil brand porcelain end grates online 13 7/8 x 24. I had to cut off a little. They are a little weak - but they were cheap. I'll check out Lowes.

RonG - I may agree with you on adding another intake vent. I cranked it up yesterday with heat & smoke to season it & measure for hot spots, check for leaks. . I think it may need another vent as you suggest. The burner I have sits in a brownie pan with 6 - 1 inch holes in the bottom. I'm cooking some pork shoulders tomorrow & will decide after I taste the results.

What type of control valve does the propane unit have? I like the propane option instead of the electric element with all the wiring involved. Do you think you'll be able to get low temps 120-180 (for summer sausage) with the propane option?
 
Just cleaned the bones on some baby backs. Put two slabs in & used one of Big Bob Gibsons recipes. And my wife's homemade sauce recipe. Used 3-1-1 method. Nice crisp outside - moist inside. Gonna throw in a pork shoulder early in a.m.
